Quick And Healthy: Flax Pudding With Mango And Coconut


There used to be a big hype about chia seeds: Everyone praised the little miracle seeds. However, when you read more about the characteristics of those "superfoods", you will notice that there are similar seeds in your own stock chamber. Our mothers have always sworn to linseed - and look, research shows that linseeds are as healthy als chia seeds.

This light linseed pudding is the perfect meal for warm summer days. It is quickly prepared, disappears in your handbag and is extremely satisfying. You can enjoy it on long car trips or during picnics on the lawn. This healthy, vegan snack fits every occasion.

Overnight linseed pudding (2 servings)

- 8 teaspoons of linseed (crushed)

- 400 ml of vegetable milk (for example almond milk)

- optional: 2 teaspoons of maple syrup, a pinch of cinnamon

- 10 fresh strawberries

- 1 mango (best cut to size and frozen, but also fresh mango is possible)

- 10 leaves of mint

- 1/2 pomegranate

- coconut chips for garnishing

On the evening before, you put 4 tablespoons of linseed and 200 milliliters of milk in each vial. If you like it sweet, you can also add a teaspoon of maple syrup and a pinch of cinnamon. Stir it and place in the refrigerator overnight.

Next morning: The flax seeds should be soaked and form a pudding. Now you can cut the strawberries and put them on top.

The mango is pureed with the mint (when the mango was frozen before it keeps the meal fresh in the handbag) and put on the strawberries.

Finally, you put pomegranate kernels and coconut chips on top - ready!
